Starting on Wednesday, July 5, 2nd Shift Brewery visitors will soon be able to order Guerrilla Street Food favorites such as the Flying Pig and Chicken Adobo while enjoying a Katy beer. Guerrilla Street Food, the acclaimed, casual Filipino concept, is opening a second location inside 2nd Shift Brewing.
As construction continues toward completion for another Guerrilla Street Food location inside the new Tropical Liquers in the Grove, this 2nd Shift outlet continues the group’s expansion plans in St. Louis. Co-founders Brian Hardesty and Joel Crespo currently serve their Filipino and Filipino-inspired dishes at their South Grand restaurant as well as the concept’s food truck. After a short meeting with 2nd Shift’s owner Steve Crider, it seemed like a no-brainer for both parties. Hardesty and Crespo explain, “Steve and the 2nd Shift team are true innovators within craft beer in St. Louis. We share that passion to offer St. Louisans something different.”
With an already built-out kitchen, the Guerrilla Street Food team will get to work right away. The menu will feature dishes from the current “Old School” menu such as: the concept’s signature of the Flying Pig, slow-roasted pork asado, calamansi, hoisin, sriracha, fried garlic and black sesame seeds served over rice and topped with a sous vide 1 hour egg and scallions; Chicken Adobo, chicken thighs braised in soy sauce, garlic, bay leaves, black pepper and vinegar, served over a bed of steamed jasmine rice & topped with scallions; 800 LB Gorilla, both the Chicken Adobo and the Flying Pig in one ginormous burrito or bowl with steamed jasmine rice, crispy fried garlic and paprika crème; and more. As the Guerrilla Street Food team learns the tastes of the beer-centric clientele, the menu will expand to include 2nd Shift-specific dishes as well.
